Police attended a home on Wells Street in Springfield, near Gosford, in a welfare check just before 3.30pm yesterday.
A 49-year-old man at the property armed himself with a screwdriver and other sharp objects, so police established a perimeter around the property.
Officers continued to try to speak with the man, but police say he refused to cooperate.
At about 9.25pm, the man tried to burn an officer by lighting an aerosol can.
Tactical police pushed into the property before the man armed himself with a sharp object and stabbed towards an officer multiple times.
Police fatally shot the man. One officer received a minor injury during the incident.
The man was treated by paramedics but died at the scene.
A critical incident team is now investigating the incident.
